Ventilation


(1)

All rooms in which food is stored, prepared, or served or in which utensils are washed shall be adequately ventilated to eliminate odors, condensation of water vapor, and the settling of grease residues.

(2)

Hoods shall be equipped with filters or other easily cleanable filtering devices.
